Weekend hand-pulled noodles

Saturday project: hand-pulled noodles with a simple tomato and egg topping. The dough needs more rest than you think, at least an hour wrapped and left alone.
Pulling is mostly patience. Mine came out uneven, some thick, some thin, but nobody at the table complained.
Recipe card is in my notebook; I will type it up once I get the water ratio right.
